Mixing and combining ingredients is a core process for many food and beverage products – whether combining liquids, mixing powders with liquids, or combining more complex systems like emulsions and extractions. This workshop will cover the basics of the theory, processes and technologies used in mixing and emulsification. This knowledge is important in food products such as condiments, sauces, dips, hummus, jams, soft drinks, juices, protein drinks, ice cream mixes, flavoured milks, yoghurt and other reconstituted dairy products.
During the workshop, products such as mayonnaise, sweet chilli sauce and high protein shakes will be made on site in the FoodBowl. This will bring to life the learnings from the material presented.
Who Should Attend: The workshop is perfect for business owners, managers, operators, food technologists and technical people working in the food, beverage and dairy sectors who are looking for an excellent basic practical grounding in mixing and emulsification technologies.
About the Presenters: The workshop will be presented by our technical partners Tetra Pak. Tetra Pak are experts in food processing equipment including the Tetra Pak High Shear Mixer, on which trial products will be made during the workshop. Tetra Pak experts from Oceania and Denmark will be hand to provide technical insights and the guided mixing demonstrations
